Low-Fat Chicken Burrito

A low-fat 20 min chicken burrito is an ideal meal for family or friends nights


Ingredients


  • 1 chopped skinless chicken breast
  • 1 black bean can
  • 3 tortillas
  • half cup mix cheese ( mozzarella - cheddar - parmesan )  
  • 1 sliced red pepper 
  • 1 Tbs chili powder
  • 1 Tbs cumin
  • 1 chopped jalapeno   
  • salt to taste
  • 2 Tbs salsa 
  • 3 Tbs Sour cream
  • 2 Tbs olive oil


Instructions

  • bring an iron skillet, add 1 Tbs olive oil then heat it to high heat then add the chicken breast, chili powder, and the red pepper  
  • cook it for 10min then add the beans and cook for 1 min with stirring then remove it
  • bring 1 tortilla, add to it 3 Ts cheese mix, 1/3 the chicken mix, 1 Tbs cream, and 1 Ts salsa then roll it and close the edges tightly, repeat with the other two tortillas
  • bring a large grill pan and heat it to medium heat with the rest of the olive oil put the 3 tortillas for 4 min on each side until the golden color 
  • remove it and serve with hot sauce, chili sauce, or whatever sauce you prefer.
